Our first culinary treat is 100% All-Natural Coconut Sugar, made from the sap of the unopened flowerbud stalks. It has a distinct sweet aroma and a pleasing, light caramel flavor. This delectable sweetener is considered a healthy alternative to cane sugar due to a low glycemic index of 35 (cane sugar=68) and a natural high nutrient content.
The coconut tree is considered the "Tree of Life" by many countries. It provides an endless list of by-products, from its roots to its leaves, culinary and non-culinary, that are used to sustain lives and livelihoods.

It is rather hot this week in KY so rather than baking I decided to try my Coconut Sugar in the Fresh Lemonade recipe found on their site.



This makes your base and you mix equal parts of the base and water. Yes I cheated with the lemons, I should have used real lemons but didn't have any and wanted to try the recipe now. It tastes great with the lemon juice. The actual lemons would have added the pulp that makes homemade lemonade taste even better. Different that the drink is brown in color from the sugar. If you can get your brain past the color it is great! The sugar tastes fantastic by itself. I plan to use it on oatmeal. It doesn't taste like Coconut like I thought it may. So much healthier for us than that nasty refined sugar, or worse yet High Fructose Corn Syrup!

When we make lemonade for Healthy Kids Festivals, we call it "Dirty Lemonade" which the kids love :) Otherwise, basically take any recipe with cane sugar and substitute it for coconut sugar - which is the evaporated sap of the coconut tree!
